100% Blue Weber Agave, from the Jalisco Highlands, 70% estate grown. Cooked in steam autoclave, a procedure pioneered by the distillery's founder, Don Jorge Salles Cuervo in 1959. Volcanic mineral water used in the milling and fermentation. Proprietary yeast strains employed for the open top fermentation in large clay tanks. Double distilled in copper pot stills. The Blanco and Reposado are aged in large, American oak Pipones.
