50% Chardonnay, 50% Savagnin from 45+ year old vines in the Lieux-Dits of "Château Gimont” et “Sous le Viaduc” in the Jura. Practicing organic, fermented with native yeasts. Chardonnay is aged for 4 years in topped up barrels, the Savagnin sees 4 years in barrel under veil.
