Product Description
100% Pinot Gris from 20 year old vines, organically farmed. The fruit is picked before sunrise and destemmed immediately. Juice remains on the skins for 72 hours before pressing. Primary fermentation and malolactic conversion occur spontaneously in 100% neutral French oak barrels. The wine rests on the lees for 8 months to build texture and flavor. Bone dry Pinot Gris. 13.4% alcohol. 320 cases produced.
