A classic wine with richness, aromatic complexity and a fresh, mineral-like tension. Pear, lime, beeswax and seashells! Pairs well with fish (salmon, bass, trout), shellfish, or with sushi and sashimi.
From Melon de Bourgogne grapes grown on a plateau of predominantly sandy clay on amphibolite and quartz and gneiss rocks. Hand harvested, fermented for two to three weeks with natural yeasts. Aged in glass-tiled concrete vats; 6 months aging on fine lees. Cold stabilized without additives.
