Chemins de Bassac Pet-Nat "Bouteillou"

100% Viognier Pet-Nat from the estate owned Bouteillou plot with limestone and clay soil. Hazy, pale straw color with golden tints. Quite dry and minerally on the nose at first, then whiffs of lemon verbena and honeysuckle. Juicy citrus and pear fruit on the palate. A delightful touch of sweetness on the finish plays beautifully off the tart acidity.

The grapes are hand-picked, pressed directly, left to naturally settle (débourbage). The wine ferments spontaneously and is bottled while still going, to finish the fermentation in bottle as pet-nat. Unfined, unfiltered, undisgorged, no sulfites added.
