100% Cabernet Franc. The vieilles vignes in this case range from 50 to 100 years old and are scattered multiple parcels on clay-limestone soils. The farming on the entire 45-hectare Filliatreau estate is certified-biodynamic as of the 2021 vintage. The bunches are harvested by hand, destemmed and fermented with native yeasts in stainless steel with a 20-day maceration. The wine is aged in steel for a year. It is bottled with a light, non-sterile filtration. Minimal sulfur addition.
