Delaware Phoenix is a New York State farm distillery producing three varieties of absinthe. Distilled in a copper pot still using traditional 19th century methods, using botanicals grown on their small farm in the Northern Catskills. No artificial color or flavor additives are utilized.
Walton Waters pays homage to the Catskills’ life-filled rivers and streams. Herbal notes shine through a medium-body opalescent haze with a touch of spice and a lemony finish. 68% abv.
