Distilleria Gualco utilizes a Piedmontese bain-marie style still for its grappa distillation, gently heating the pomace and resulting in a superlative grappa. Unaged, but rested in stainless steel for six months before bottling to soften the spirit, the final grappa displays all the character of the Cortese di Gavi grape from which it is made in a dry and elegant distillate.
