100% Trebbiano Spoletino. From biodynamically farmed, certified-organic, hand-harvested estate fruit. The bunches are destemmed and fermented with native yeasts in open-topped wooden tanks (tini ) without temperature control or sulfur and with punchdowns 3x per day. Maceration, for which the wine is very directly named, lasts from 12-14 days. The wine is aged on its fine lees in tank for 3 months and is bottled with no fining, flitering or sulfur.
