Barrel fermented with wild yeast from bitter-sharp Kingston Black apples, aged for a year in barrel then re-conditioned with fresh Kingston Black juice and bottled col fondo with no sulfur addition. Tangy fresh apple and citrus aromas, with earthy apple skin notes on the palate. Quite dry, but with a full, rich texture and tart finish. Raw, unfined, unfiltered.
