Sparkling Pignoletto from Emilia-Romagna, from 15-20 year old vines, certified biodynamic, on clay/limestone soils. Spontaneous fermentation and aging in concrete tanks, with the maceration lasting anywhere from hours to days, aged six months on the lees, then bottled with no fining or filtration.
Sui Lieviti means "on the lees". It is not disgorged, and Federico recommends turning the bottle upside down to allow the lees to incorporate back into the rest of the bottle.
